Beverage: Orange Blossom Sharbat
Chia seeds, orange blossom water, and a hint of sugar.
Course 1: Sabzi
Fresh mint, radish, feta cheese, soaked walnuts, and almonds served with sangkak bread.
Course 2: Torshi
Homemade pickles — eggplant cooked in vinegar with fresh vegetables (carrots, cauliflower, cabbage), garlic, fresh herbs, and spices.
Course 3: Salad Shirazi
Organic cucumber, tomatoes, and onions with fresh mint-lime dressing.
Course 4: Abgoosht
Lamb shank, chickpeas, white beans, potatoes, onion, tomatoes, dried lime, turmeric, cinnamon and chef Seti's favorite Persian spice mix slow-cooked dish for over ten hours and served with Sangak bread.
This entree is served in two parts. First, the soup is served, paired with tart pickles. Then, al lthe ingredients are mashed and turned into a paste, goosht koobideh.
Course 5: Fereni with Date Sauce
Orange blossom and milk mixed with rice flour and sugar, garnished with date sauce and sun-dried coconut.

Black tea brewed with orange blossom.
