Course 1: Chile Verde Corundas
Michoacan corn tamales stuffed with green chile seitan and steamed in fresh corn husks. Served with tomatillo salsa, kale-lime-watermelon radish salad, and ume cashew cream.
Course 2: Ensalada de Nopales y Elote
Roasted corn and Mexican cactus, pico de gallo, citrus-jalapeno tofu, guajillo-pepita dressing, serrano-avocado sauce, and epazote refried pinto beans.
Course 3: Enchiladas Morelianas Sopa de Arroz y Refritos
Potato-carrot enchilada with guajillo-ancho-pasillo pepper salsa, tofu cashew queso fresco, Mexican tomato rice, avocado, and epazote refried beans.
Course 4: Arroz Con Leche
Coconut-almond sweet rice with raisins and cinnamon with sugar-coated wheat buñuelos.
